Spelt muffins without eggs

Ingredients for 1 servings:

  • 250 g spelt flour type 1050
  • 1 tbsp baking powder
  • 80 g butter
  • 120 g cane sugar
  • some vanilla or 1 packet of vanilla sugar
  • 1 large banana(s) or 2 small, very ripe
  • 125 ml buttermilk
  • 125 g blueberries, optional
  • 1 apple or 2, optional

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

for 12 muffins, with buttermilk

Wash the fruit. Cut the apples into small pieces. Preheat the oven to 180°C. Sift the flour and baking powder into a bowl. Melt the butter and brown sugar on the stovetop. Add the vanilla extract or vanilla sugar. Mash the banana and add to the butter mixture. Stir in the buttermilk. Mix the flour and the wet mixture until a smooth batter forms. Fold in the fruit at the end, if desired. Divide the batter among 12 muffin cups and bake on the middle rack for 30 minutes.
