Spelt orange cookies

Ingredients for 1 servings:

  • 350 g butter, cold
  • 200 g brown cane sugar
  • 3 orange(s), untreated
  • 1 pinch of salt
  • 1 vanilla pod(s)
  • 20 ml Cointreau
  • 50 g candied orange peel
  • 600 g flour (spelt flour)
  • 150 g almond(s), grated
  • 1 egg(s)
  • 200 g chocolate coating
  • 250 g jam (raspberry jam)

Instructions

Working time approx. 35 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 35 minutes

Knead the butter with the cane sugar, orange zest from all three oranges, salt, vanilla pulp, Cointreau, chopped candied orange peel, flour, and almonds until smooth. Finally, add the egg. Roll out the dough between two sheets of baking paper to a thickness of about 6 mm and cut out cookies. Bake on a baking sheet lined with baking paper in a preheated oven at 160°C for about 12 minutes. Melt the chocolate coating in a hot water bath. Dip half of the cookies into the chocolate coating and let it dry. Spread the other half with jam and assemble the cookies.
