Ingredients for 4 servings:
- 250 g spelt
- ¼ liter yeast vegetable broth extract
- 150 g carrot(s)
- 1 onion(s)
- 1 bunch chives , (1)
- 2 eggs
- 250 g quark (low-fat quark), (1)
- 30 g semolina
- salt and pepper
- 60 g butter
- 100 g curd cheese, (2)
- 2 cans of yogurt
- 3 tbsp crème fraîche
- 2 tbsp vinegar (vinegar essence), possibly half
- Honey, to taste
- cress
- 2 bunches of parsley
- 2 bunches of dill
- 2 bunch chives , (2)
Instructions
Working time approx. 40 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 40 minutes
Soak the spelt in cold water overnight. The next day, cook it in the soaking water with vegetable stock for 90 minutes. Add the peeled carrots and cook for 20 minutes. Drain and finely dice the carrots. Mix the spelt with the diced carrots and onions, chives (1), eggs, quark (1), and semolina. Season with salt and pepper. Let it stand for 10-15 minutes. Form the mixture into 8 patties and fry in hot butter for 3-4 minutes on each side. Mix the quark (2), yogurt, crème fraîche, salt, pepper, vinegar essence and honey, cress, parsley, dill, and chives (2) to make a sauce.
