Spelt Skyr Grain Rolls

Ingredients for 1 servings:

  • 250 g Skyr
  • 2 tbsp olive oil
  • 1 m.-sized egg(s)
  • 2 tbsp chia seeds
  • 2 tbsp flaxseed
  • 200 g wholemeal spelt flour
  • 200 g spelt flour type 630
  • 1 bag of baking powder
  • 1 tsp salt
  • some flour for the work surface

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Place the skyr in a bowl and whisk with the olive oil, egg, chia seeds, and flaxseeds. Now add the wholemeal spelt flour, spelt flour, baking powder, and salt and knead until the dough is only slightly sticky. Form the dough into a ball on a lightly floured surface and divide it into 8 pieces. Then form 8 balls and place them on a baking tray lined with baking paper. Preheat the oven to 180°C (fan/convection oven). Once the temperature is reached, place an ovenproof dish filled with hot water inside. Only then place the tray with the rolls in the upper third of the oven and bake for about 20 minutes. This makes enough for 8 rolls. Tip: I rolled the dough balls directly in lettuce seeds and then placed them on the tray.
