Ingredients for 1 servings:

  • 3 eggs
  • 250 g flour
  • 1 pinch of salt
  • 200 g butter, cold
  • 3 tbsp sour cream
  • 125 g powdered sugar
  • 10 g cocoa powder
  • ¼ tsp ground ginger
  • ¼ tsp star anise, ground
  • ¼ tsp clove powder
  • ¼ tsp cardamom, ground
  • 1 pinch of nutmeg
  • 150 g hazelnuts

Instructions

Working time approx. 1 hour; Rest time approx. 12 hours; Total time approx. 13 hours

Christmas baking, makes about 50 pieces

Separate the eggs. Knead the flour, salt, butter, egg yolks, and cream into a smooth dough and refrigerate overnight. Divide the dough into quarters and knead lightly. Roll out the dough to about 2mm thick, cut out stars, and place on a baking sheet lined with baking paper. Beat the egg whites until stiff, gradually adding the sugar. Mix the hazelnuts, cocoa, and spices and carefully fold in. Transfer the mixture to a piping bag fitted with a perforated nozzle and pipe a dot onto the stars. Bake the cookies at 180°C for about 18 minutes.
