Ingredients for 1 servings:
- 150 g spelt flour
- 250 g flour (whole wheat flour)
- 1 tsp salt
- 1 tsp sugar
- 1 bag(s) of yeast (dry yeast)
- 100 g dried fruits: apricots, apples, figs, plums, diced/sliced
- 130 ml water
- 120 ml milk, skimmed milk (01%)
- 1 tbsp gingerbread spice
Instructions
Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes
Place water, milk, and salt in the bread maker, then add the flour, sugar, and gingerbread spice. Make a well in the flour and add the yeast. (Important: Yeast must not come into contact with liquid.) Turn on the bread maker. After 3/4 of the kneading process, add the dried, diced fruit and continue kneading. If you don’t have a bread maker: Mix the flour, spice, and salt, then add the yeast and sugar and mix. Add the water and milk together and knead, knead, knead for at least 10 minutes. Flatten the dough and add the fruit, roll it up, and knead thoroughly to distribute the fruit evenly. Let the dough rise in a warm place until doubled in size. Shape the rolls and place them on a baking sheet lined with baking paper. Let rise for another 10 minutes. Place a bowl of water on the baking sheet and bake the rolls for about 15 minutes at 220°C on the middle rack.
