Spiced cherries for game dishes

Ingredients for 1 servings:

  • 240 g sugar
  • 400 ml red wine
  • 10 peppercorns, black
  • ½ pack of gingerbread spice
  • 2 bay leaves
  • 4 juniper berries
  • 300 g cherries

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

instead of the usual cranberries or ideal for preparing sauces

Melt the sugar in a saucepan. Deglaze with the red wine. Add the spices and simmer for about 10 minutes. Add the pitted cherries and simmer briefly (about 1 minute). Remove from the heat and let stand for about 30 minutes. Bring the cherries back to a boil briefly and then, while still hot, pour into jars, seal tightly, and set aside to cool. They’ll keep for about a year. I like to use them with game dishes or to enhance sauces.
