Spiced goulash with speculatius

Ingredients for 4 servings:

  • 800 g beef, cut very finely, alternatively game meat
  • 2 onions, chopped
  • 1 small carrot(s), chopped or grated
  • 1 piece(s) celeriac, same size as the carrot, chopped or grated
  • 300 red wine
  • some water as needed
  • 2 tsp tomato paste
  • 1 tsp sugar
  • 1 tsp, heaped paprika powder, sweet
  • 1 pinch of allspice powder
  • 1 pinch of cinnamon powder
  • ½ tsp cayenne pepper or chili powder
  • 8 spiced speculatius cookies

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours

Sear the meat. Add the chopped onions, celery, and carrots and sear. Deglaze with the red wine and add a little water. The meat and vegetables should be covered by about two fingers. Simmer for about 1-1.5 hours, until the meat is nice and tender. Add the remaining ingredients and season with salt. Add the speculatius biscuits to the pot and let them cook down; this cooks relatively quickly. They thicken the sauce, so there’s no need to thicken it in any other way.
