Spicy apple compote with cider

Ingredients for 2 servings:

  • 700 ml cider
  • 1 kg apples
  • 1 lemon(s)
  • 75 g sugar
  • ½ tsp cinnamon
  • 1 pinch of nutmeg

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring the cider to a boil and reduce by half (about 10 minutes). In the meantime, wash, peel, core, and finely slice the apples. Rinse the lemon with hot water, dry it, zest, and squeeze out the juice. Add the apples, lemon zest, and juice to the cider, cover, and simmer over low heat for about 15 minutes, stirring occasionally. Purée or mash half of the apple pieces with a fork and return them to the pot. Season with sugar. Add the cinnamon and nutmeg and bring back to a boil. Pour the hot compote into prepared jars and let stand with the lid on for about 5 minutes. It will keep for about 4 months.
