Ingredients for 12 servings:
- 250 g quark
- 1 egg white
- 50 g sugar
- 4 tbsp oil
- 6 tbsp milk
- 400 g flour
- 1 packet of baking powder
- 500 g apples
- 50 g raisins
- 1 lemon(s), the juice
- 25 g brown sugar
- 1 tsp cinnamon
- 1 pinch(s) nutmeg, clove(s), cardamom and coriander
- ½ tbsp flour
- 1 egg yolk
- 1 tbsp milk

For the filling, peel and core the apples, slice them into thin wedges, and mix with the lemon juice, sugar, and spices. Mix the quark with the egg whites, oil, milk, and sugar. Mix the flour with the baking powder, add a spoonful at a time to the quark, and then knead in. Roll out the dough to about ½ cm thick and cut out squares with sides measuring approximately 10-12 cm. Mix the flour into the apple mixture. Spread the apple mixture evenly over the dough pieces, ensuring that there is at least a 1-2 cm border. Fold the dough pieces together and press the edges firmly shut. Place the apple turnovers on a baking sheet lined with baking paper. Whisk the egg yolk with the milk and brush over the turnovers. Bake at 180°C for 15-20 minutes until golden brown. They taste great fresh or warm, and they are still nice and moist the next day.
