Spicy banana soup

Ingredients for 4 servings:

  • 1 onion(s), finely chopped
  • 1 celery stick, sliced
  • 1 carrot(s), sliced
  • 1 clove(s) garlic, finely chopped
  • 2 bananas, cut into cubes
  • 3 tbsp sesame oil
  • 1 chili pepper(s), finely chopped
  • 250 ml orange juice
  • 500 ml vegetable stock
  • 200 ml coconut milk
  • Saffron powder
  • Salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Sauté the onion in sesame oil, add the vegetables and chili, and cook until almost soft. Finally, stir in the bananas. Deglaze with the juice, stock, and coconut milk and simmer over low heat for about 20 minutes. Purée very finely. Season with saffron and salt. Serve with celery leaves.
