Spicy Caper Meatballs

Ingredients
 

For the meatballs:

  • 3 slices Breakfast bacon
  • 500 g Mixed minced meat
  • 2 Spring onions
  • 1 Clove of garlic
  • 2 tbsp Chopped capers
  • 2 tsp Mustard medium hot
  • 2 tsp Frozen parsley

Spices:

  • 0,5 tsp Salt
  • 0,5 tsp Mexican herb pepper, spice mixture consisting of pepper, paprika, oregano, rosemary, onions and tarragon
  • 1 tsp Sweet paprika
  • 1 pinch Colorful pepper from the mill

For the salad:

  • 4 handful Lamb's lettuce fresh
  • 1 large Shallot
  • 0,25 Cucumber
  • 1 tsp Freshly chopped leaf parsley
  • 1 tsp Freshly chopped chives

For the dressing:

  • 2 tbsp Mango spice chutney
  • 2 tbsp Vegetable oil
  • 1,5 tbsp Orange balsamic vinegar
  • 1 shot Orange juice
  • 0,5 tsp Honey liquid
  • 1 pinch Salt
  • 4 turns Colorful pepper from the mill
  • 1 tsp Arabic orange spice, spice mixture consisting of orange blossom, coriander, pepper, mustard seeds, cumin, paprika, fennel, ginger, chilli and cinnamon

Instructions
 

  • Finely dice the breakfast bacon and fry until crispy without adding any further fat. Allow to cool slightly. Clean and wash the spring onions and cut into fine rings. Peel and finely chop the garlic.
  • Preheat the oven to 180 degrees (top and bottom heat). Process the minced meat, spring onions, garlic, capers, mustard, parsley, bacon and spices to a smooth mass. Shape 2 to 3 centimeter balls out of this and place them on a baking sheet lined with baking paper. Cook in the oven for about 20 minutes until the balls are lightly browned (of course you can also fry the meatballs in the pan, that's a matter of taste).
  • In the meantime, read the lamb's lettuce, clean it, wash it thoroughly and spin it dry. Peel and finely dice shallot. Wash the cucumber and dice finely. Wash herbs, shake dry and finely chop. Mix everything in a salad bowl.
  • For the dressing, whisk the mango chutney, oil, vinegar, orange juice and honey, season with the spices. Pour the dressing over the salad just before serving, arrange the meatballs with the oven tomatoes and the salad and serve immediately. Have fun trying it out and enjoy your meal.
  • Tip 5: The caramelized oven tomatoes can be cooked together with the meatballs on the tray in the oven. Practical because everything is ready together and you can prepare the salad in the oven while it is cooking. This dish is therefore also suitable for everyday use. The dressing also goes well with other leaf salads, actually didn't want to publish the recipe here, but the dressing was really delicious. I don't want to withhold that from you :-). LG Michaela
