Spicy carrot and apple salad

Ingredients for 4 servings:

  • 500 g carrot(s)
  • 2 apples, sour
  • 3 spring onions
  • 100 g sour cream
  • 2 tbsp mayonnaise (salad mayonnaise)
  • 1 tbsp mustard, medium hot
  • 5 tbsp orange juice
  • ½ bowl of cress
  • Salt
  • pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

with spring onions and a light mustard note

Combine sour cream, mayonnaise, mustard, and orange juice to make a dressing. Season with salt and pepper. Peel the carrots and apples, then grate them directly into the dressing. Peel the spring onions, halve them, and slice them into very fine rings. Add them and mix well. Finally, stir in the cress (you can do this before serving, but it’s not necessary). Note: The salad tastes best when it’s left to marinate for a few hours. It can be eaten as a standalone meal, but it also goes well as a side dish to grilled food.
