Spicy carrot salad with yogurt and roasted seeds

Ingredients for 1 servings:

  • 4 carrots
  • 2 tsp lemon juice
  • 2 tsp white vinegar (e.g. wild garlic vinegar)
  • 2 tbsp yogurt
  • 2 tsp olive oil
  • 2 tsp sunflower seeds, pumpkin seeds and sesame seeds, mixed
  • cress
  • Salt
  • 1 tsp sugar (lactose)
  • Cayenne pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

made quick and easy

Finely grate the carrots and place them in a bowl. Make a dressing with lemon juice, vinegar, yogurt, and olive oil. Dissolve the lactose in it (a little honey will work as an alternative) and season with salt and cayenne pepper. Toast the seeds in a dry pan and sprinkle over the carrot salad. Sprinkle with cress.
