Spicy chard

Ingredients for 3 servings:

  • 1 kg chard
  • 1 vegetable onion(s)
  • 3 cloves garlic
  • ½ tsp pine nuts
  • Olive oil, cold squeezed
  • 150g Gorgonzola
  • ½ cup white wine or water
  • Salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Peel and chop the onions and garlic. Wash the chard and remove any tough stalks. Cut the Gorgonzola into small cubes. Heat the olive oil in a sufficiently large pot or pan and fry the onions over medium heat until translucent. Then sauté the garlic for 1 minute, then toast the pine nuts for about 1/2 minute. Deglaze with 1/2 cup of white wine or water. Now add the chard, season well with salt, and sauté for about 5 minutes, until it begins to collapse. The chard should still be firm to the bite. Turn off the heat, sprinkle the Gorgonzola flakes over the chard, and wait briefly with the lid closed until the cheese has melted. This spicy vegetable pairs well with Swiss rösti and pan-fried salmon.
