Lukewarm cucumber salad

Ingredients for 2 servings:

  • 1 cucumber(s)
  • 1 tbsp honey
  • 3 tbsp vinegar
  • 200 g crème fraîche
  • 50 g shallot(s), diced
  • 1 lemon(s), untreated, grated peel
  • 2 tbsp tomatoes, diced
  • 2 tbsp tarragon leaves
  • Salt
  • Cayenne pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the cucumber, halve it lengthwise, and scoop out the core with a tablespoon. Cut the halves into 1/2 cm thick slices. Melt the honey in a pan, deglaze with vinegar, and reduce to a simmer. Add the cucumber slices and sauté until translucent. Mix the crème fraîche with the diced shallots and lemon zest. Add the diced tomatoes and tarragon leaves, and season with salt and cayenne pepper. Add the glazed cucumbers and let the salad marinate briefly.
