Spicy Chicken Wings in Balinese BBQ Sauce

Ingredients
 

For the chicken wings:

  • 12 Chicken wings from the package (upper and lower arm mixed), frozen
  • 2 liter Peanut oil, refined

For the BBQ sauce:

  • 2 tbsp Barbecue sauce, smoky
  • 2 tbsp Thai spring roll sauce
  • 1 tbsp Soy sauce, sweetie
  • 1 tbsp Soy sauce, light
  • 4 tbsp Mango juice
  • 1 tbsp Lime juice, fresher
  • 3 tbsp Balinese mango syrup ala Ayu (URL see step 4))

To garnish:

  • 3 tbsp Flowers and leaves

Instructions
 

  • Defrost and dry the frozen spicy chicken wings. Preheat the frying oil to 170 degrees.
  • In the meantime, add the BBQ sauce by mixing all the ingredients in a medium-sized pan and simmering.
  • Fry the (pre-cooked) chicken wings in about 6 minutes until light brown and add to the BBQ sauce. Drizzle with the sauce until they are evenly glazed. Distribute on the serving plates, garnish and serve as a side dish.
