Ingredients for 1 servings:

  • 500 g dates, fresh
  • ½ tbsp sea salt
  • 300 ml vinegar, honey vinegar or mild white wine vinegar
  • 6 black peppercorns
  • 6 cloves
  • ½ stalk(s) cinnamon

I’d like to dedicate this recipe to Phoenix64w, with many thanks for the inspiration. Halve and pit the dates. Peel any skins that come off easily. Then lay them out on a board and sprinkle the salt evenly over them. Layer the dates in jars. The jars should be very full. Roughly grind the spices in a mortar and pestle and dry roast them. Deglaze with the vinegar and bring the liquid to a boil. Pour the hot liquid into the jars. Make sure the spices are distributed fairly evenly. The dates should be completely covered with the liquid. Immediately close the twist-off jars and let them cool upright on the lid. The dates should infuse for at least 2 weeks. The shelf life is 3-6 months.
