Spicy fig mustard with thyme

Ingredients for 1 servings:

  • 20 figs, green
  • 250 g brown sugar
  • 50 g mustard powder
  • 5 stalks of thyme
  • 1 large lime(s)
  • some piri-piri or chili
  • some black pepper, freshly ground
  • e.g. wasabi paste or hot mustard if you want more spice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Wash the figs and remove the stems. Cut the figs into pieces and puree in a blender. Combine them in a saucepan with the brown sugar and bring to a boil. Add the thyme stalks. Simmer for about 5 minutes, stirring constantly. Remove the thyme stalks, otherwise the flavor will be too intense. Then add the mustard flour and lime juice and season with piripiri and pepper. Bring to a boil briefly. If you want more spiciness, you can add wasabi paste (I used one tube) or hot mustard. Then fill into small, boiled twist-off jars and seal tightly. Makes a great small gift. Tip: Don’t heat the mustard flour for too long. The longer it is heated, the milder it becomes.
