  1. Peel, halve and slice the onions, heat a little clarified butter and brown the onions nicely. Take out of the pan and let cool down a bit.
  2. In the meantime, put the remaining ingredients for the mince in a bowl and stir, season well and then knead the onion underneath. Let it rest a little and season again later.
  3. In the meantime, clean the leek for the filling and cut it into slices and brown it well in clarified butter, season with salt, pepper and chilli powder to taste (you can have a little pep)
  4. Preheat the oven to 175 ° convection.
  5. Now spread the mixture on baking paper (just wide enough so that the roll fits into the roasting pan !!). Cover the lower half with ham and cheese slices, then spread the leek up to about 4 cm from the upper edge. Carefully shape into a roll with the help of the paper and then place it in the roaster. .
  6. Now slide the roasting pan into the oven on the 2nd rail from the bottom for about 70 minutes and bake it until it is nice and brown.
  7. Serve with side dishes to taste.
