Ingredients for 2 servings:
- 4 small pumpkins, preferably patissons, alternatively rondini
- 300 g minced meat, mixed or beef
- 1 bulb(s) of young garlic, before division into cloves
- 1 sprig(s) rosemary, fresh
- 2 small chili peppers, chili variety according to taste and desired spiciness
- 2 sprig(s) fresh basil, plus some for decoration if desired
- 4 leaves of sage, fresh
- 1 tsp nettle seeds, fresh or dried
- 1 pack of tomatoes, pureed
- ½ tsp herbal salt, e.g. homemade nasturtium salt
- Pepper, freshly ground
- Grated cheese, optional
Instructions

Cut off the stalks and hollow out the squash squash (or rondini) (a melon baller is a good tool for this). Purée the flesh. Also hollow out some of the detached tops. Finely dice the onion and garlic and add to the minced meat. Finely chop the chili, rosemary, basil, and sage with a mezzaluna and add to the minced meat. Add half of the puréed flesh to the minced meat. Mix everything thoroughly to form a filling mixture. Fill the hollowed-out squash with the mixture and replace the lids. Place them side by side in a large, shallow baking dish. If there is any leftover filling mixture (depending on the size of the squash squash and how deeply they were hollowed out), shape it into small balls and add it to the baking dish. Mix the other half of the puréed flesh with the passata, season the sauce with herb salt and pepper, and fill the baking dish with it. Sprinkle with nettle seeds. Bake on the bottom rack at 175°C fan-assisted oven for 45-60 minutes. The baking time depends on the size of the patty pancakes. It’s better to bake a little longer than too short to ensure the mince is thoroughly cooked. If you like, you can sprinkle some grated cheese (my favorite here is a Gouda with sambal oelek) on top in the last 10 minutes, but this will no longer make the dish lactose-free. Garnish with basil if desired when serving.
