Spicy Indian tomato sauce

Ingredients for 2 servings:

  • 1 can/n tomatoes, chopped
  • 1 chili pepper(s), green
  • 1 small onion(s)
  • 20 g butter or vegetable oil
  • 1 small bunch of mint
  • 1 small bunch of coriander
  • 5 g ginger
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 pinch(s) of turmeric powder
  • 1 pinch(s) of cayenne pepper
  • 1 pinch of salt
  • 1 pinch(s) of sugar
  • 1 dash of vinegar, e.g. white balsamic vinegar

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

quick and vegetarian

Finely dice the onion and sauté in butter until translucent. Meanwhile, thinly slice the chili and ginger, and finely chop the mint and coriander. Then deglaze the onion with the tomatoes, add the remaining ingredients and spices, and simmer for about 10 minutes. Season to taste (or add other spices if desired). Serve with basmati rice (enough for about one cup of rice).
