Ingredients for 1 servings:
- 2 mangoes
- 5 cm ginger, small weighed
- 1 grapefruit, red
- 1 tsp vegetable stock, granulated
- 1 cup white wine, or water
- 5 grains of pepper, ground
- 1 pinch(s) of salt and whole cane sugar

Peel and deseed the mango and grapefruit, then add them to the wine along with the other ingredients. Cook for about 5-10 minutes, depending on the ripeness of the mango. Blend everything with an electric hand blender; this results in a lovely, creamy, slightly bitter sauce, perfect for all kinds of patties.
