Ingredients for 2 servings:
- 350 g potatoes
- 75 g onion(s), chopped
- 75 g tomatoes, chopped
- 2 tbsp oil
- 2 chili peppers, dried, crumbled
- 1 pepper, green
- ½ tsp cumin
- ¼ tsp turmeric
- ½ tsp salt
- ½ bunch coriander greens, chopped
- 200 ml water

Aloo Ka Bhurta
Boil the potatoes and let them cool. Then peel and mash them. Heat the oil in a medium saucepan. Add the onions, cumin, and crushed chilies. Cook the onions until golden brown. Add the mashed potatoes. Add the turmeric, tomatoes, chili peppers, and salt, stirring well after each addition. Pour in 150-200ml of water and cook over low heat until the mixture bubbles. Add half of the coriander and cook for another minute. Stir in the remaining coriander. Serve with chapati or toast.
