Spicy Mayonnaise
The perfect spicy mayonnaise recipe with a picture and simple step-by-step instructions.
- 2 Egg yolks fresh
- 1 tsp Dijon mustard
- 0,5 tsp Garlic paste
- 2 tbsp Lemon juice
- 2 Pinches Sugar
- 2 Splash Worcester sauce
- 100 ml Olive oil (a mild olive oil)
- 350 ml Sunflower or rapeseed oil
- Salt (you can also use light soy sauce as an alternative)
- White milled pepper
- Chilli (cayenne pepper)
- Take all ingredients out of the refrigerator in good time so that they can reach the same temperature.
- Put the egg yolks in a bowl, mix together the mustard, possibly garlic paste, lemon juice, salt, pepper, cayenne pepper, the pinches of sugar and a dash of Wocestershire sauce.
- Now stir diligently with a hand mixer and always stir in the oil with a thin stream until it binds well and is nice and creamy.
- Finally, season to taste again. Pour the mayonnaise into a clean glass.
- The mayonnaise can be kept in the refrigerator for about 1 week.
