Spicy Mayonnaise

The perfect spicy mayonnaise recipe with a picture and simple step-by-step instructions.

  • 2 Egg yolks fresh
  • 1 tsp Dijon mustard
  • 0,5 tsp Garlic paste
  • 2 tbsp Lemon juice
  • 2 Pinches Sugar
  • 2 Splash Worcester sauce
  • 100 ml Olive oil (a mild olive oil)
  • 350 ml Sunflower or rapeseed oil
  • Salt (you can also use light soy sauce as an alternative)
  • White milled pepper
  • Chilli (cayenne pepper)
  1. Take all ingredients out of the refrigerator in good time so that they can reach the same temperature.
  2. Put the egg yolks in a bowl, mix together the mustard, possibly garlic paste, lemon juice, salt, pepper, cayenne pepper, the pinches of sugar and a dash of Wocestershire sauce.
  3. Now stir diligently with a hand mixer and always stir in the oil with a thin stream until it binds well and is nice and creamy.
  4. Finally, season to taste again. Pour the mayonnaise into a clean glass.
  5. The mayonnaise can be kept in the refrigerator for about 1 week.
