Spicy Meatloaf with Olives, Parmesan and Sun-dried Tomatoes

Ingredients
 

  • 500 g Mixed minced meat
  • 1 medium Red Onion
  • 2 Garlic cloves
  • 6 Dried tomatoes in oil
  • 10 Green olives with paprika filling
  • 1 small Turkish sweet peppers green
  • 2 tbsp Ajvar mild
  • 1 tsp Sambal Oelek
  • 2 tbsp Italian herbs frozen
  • 3 tbsp Parmesan cheese
  • 1 tsp Salt
  • 4 Turns of black pepper from the mill
  • 1 tsp Sweet paprika
  • 0,5 tsp Cayenne pepper

Instructions
 

  • Preheat the oven to 180 degrees (top and bottom heat). Drain the olives and tomatoes well. Peel off the onion and garlic cloves and dice both finely. Finely chop the tomatoes, divide the olives into thin rings. Clean and wash the peppers, cut into small cubes.
  • Process the minced meat, onion, garlic, sun-dried tomatoes, olives, ajvar, sambal oelek, herbs, Parmesan and spices into a smooth minced dough. Shape it into a meat loaf and place in a baking dish. Cook in the oven for about 45-50 minutes until the roast is nicely browned.
  • A fluffy and juicy meatloaf, as side dishes we had mashed potatoes with roasted onions and chives, caramelized baked tomatoes and paprika sauce. Links to the recipes in step four. Have fun trying!
