Ingredients for 4 servings:
- 200 g pasta (wholemeal pasta)
- 300 g celery
- 500 g leek
- 500 g carrot(s)
- 2 tbsp butter
- 1 liter vegetable broth
- Salt and pepper, cayenne pepper
- 1 cup sour cream
- 125 g blue cheese
- 1 bunch of chives
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cook the pasta in salted water until tender. Dice the celery, and slice the leek and carrots. Heat the butter in a saucepan and sauté the vegetables. Pour in the broth and simmer over low heat for 15-20 minutes. Add the pasta and heat until tender. Season to taste and stir in the sour cream. Dice the cheese. Serve the soup in bowls, sprinkled with the cheese and finely chopped chives.
