Ingredients for 2 servings:

  • 300 g pasta
  • 4 garlic cloves
  • 2 small peppers, hot
  • olive oil
  • some salt for the pasta water

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Aglio e Olio, with garlic, olive oil and hot peppers

Cook pasta in salted water until al dente. Finely chop the garlic cloves and chili peppers. Meanwhile, heat olive oil in a saucepan (about enough to cover a 20 cm diameter pot with a finger’s thickness). Caution: Do not let the oil get too hot! Then finely chop the garlic. Cut the chili peppers into thin strips. Add them to the oil and sauté until the garlic begins to color slightly, but do not let it over-brown. Plate the pasta, pour the oil, garlic, and chili pepper mixture over the top, and serve.
