Spicy Orange Pasta Salad

Ingredients for 4 servings:

  • 300 g pasta of your choice
  • 4 oranges, alternatively mandarins from the can
  • 250 g natural yogurt
  • 6 Pepper, red, medium hot, pickled
  • ½ tsp orange blossom water
  • 1 tbsp olive oil
  • 2 tbsp cheese (hard cheese of your choice), grated
  • salt and pepper
  • Paprika powder for sprinkling
  • Parsley, chopped, for sprinkling

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the oranges into wedges and peel off the skin, then cut into small pieces (reserving the juice). If you want to save yourself the sticky work, you can also use canned mandarin oranges. Finely chop the peppers, removing the seeds, and mix with the oranges (and the reserved juice), yogurt, spices, cheese, and oil. Chill, and in the meantime, cook the pasta until al dente. Rinse the hot pasta several times with cold water and then stir in the yogurt mixture. Finally, sprinkle with paprika and chopped parsley.
