Ingredients for 6 servings:
- 500 g chicken breast, shredded
- 1 onion(s), finely chopped
- 1 garlic clove(s), finely chopped
- 1 tsp chili powder
- ½ tsp curry
- 225 g cream cheese
- 2 can/n tomatoes with chili (225g each)
- 750 ml chicken broth
- 125 ml cream
- salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
In a large soup pot, brown the shredded chicken breast with onion and garlic. Stir the cream cheese and heavy cream with the spices into the meat mixture until the cream cheese has melted. Now add the tomatoes and green chili and the broth, bring to a boil briefly, then reduce the heat and slowly simmer the soup over low heat until it’s done. Serve with baguette.
