Spicy pork curry

Ingredients for 4 servings:

  • 500 g pork
  • 1 onion(s)
  • 1 garlic clove(s)
  • 300 ml coconut milk
  • 1 tbsp cornstarch
  • 3 tbsp curry powder
  • 300 g sugar snap peas (snow peas)
  • salt and pepper
  • possibly sambal oelek if required
  • Oil for frying
  • 500 g rice

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Cook the rice in salted water. Meanwhile, cut the meat into bite-sized pieces and dust with cornstarch. Peel and finely chop the onion and garlic. Trim the snow peas. Heat the oil in a wok and fry the meat briefly and vigorously in batches. Remove the meat from the wok and keep warm. Sauté the curry powder in it and add the onion and garlic. Fry the onions until translucent. Add the meat again and mix everything together. Pour in the coconut milk and add the snow peas. Cook until the peas have the desired bite. Season to taste with salt, pepper, and sambal oelek, if desired. Arrange on plates and serve hot.
