Spicy potato salad from the USA

Ingredients for 4 servings:

  • 1 kg boiled jacket potatoes
  • 1 bell pepper(s), green
  • 4 stalks celery
  • 1 bunch of spring onions
  • 2 shallots
  • 1 Pepper
  • 2 garlic cloves
  • 2 tbsp chives, dried
  • 3 tsp basil
  • 2 tbsp parsley, dried
  • 300 g mayonnaise
  • 4 tbsp sweet cream
  • 2 tsp mustard, medium hot
  • 1 tsp sugar
  • Salt

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes

Peel the boiled potatoes and dice them. Finely dice the bell peppers and shallots, and thinly slice the celery and spring onions crosswise. Deseed the chili peppers and also dice them very finely. Finely chop the garlic cloves. Mix the potatoes with the vegetables, shallots, chili peppers, garlic, and herbs. Season with salt. Combine the mayonnaise with the cream, mustard, and sugar and pour over the salad ingredients. Mix everything well and refrigerate for at least 30 minutes.
