Ingredients for 4 servings:
- 800 g potatoes, small
- 2 tbsp olive oil
- ½ tsp curry powder
- ½ tsp Italian herbs
- ½ tsp paprika powder
- salt and pepper
- 3 tbsp sesame seeds
- 4 onions, red
- 1 small jar of cucumber(s) (gherkins)
- 1 small jar of onion(s) (shell onions)
- 2 tbsp capers
- 5 tbsp yogurt
- 5 tbsp mayonnaise
- 1 tbsp mustard
- 1 tsp sugar
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Peel the potatoes and halve them lengthwise. Mix olive oil with curry, herbs, paprika, salt, and pepper, and spread half of the potatoes on a baking sheet. Place the potatoes on top, drizzle with the remaining oil, and sprinkle with sesame seeds. Bake in a preheated oven at 200°C for about 30-35 minutes. Peel the onions and slice them into rings. Heat a little oil in a pan and sauté the onions. Drain the gherkins, pearl onions, and capers (reserving some of the brine from the cucumbers). Halve the gherkins lengthwise and mix with the potatoes, onions, pearl onions, and capers. For the dressing, combine 5 tablespoons of the cucumber brine with the yogurt, mayonnaise, mustard, and sugar, and season with salt and pepper. Serve with the potato salad.
