Spicy potato soup

Ingredients for 4 servings:

  • 1 kg potatoes, peeled
  • 1 ½ liters of meat broth
  • 100 g bacon, streaky
  • 1 large onion(s)
  • ½ cup sour cream
  • 4 sausages (Mettenden)
  • 1 bunch of chives
  • Salt
  • marjoram
  • nutmeg

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the potatoes into large cubes and simmer with the meat broth for about 20 minutes. To make the soup creamy, press about half of the potatoes through a sieve with the broth. Finely dice the bacon and onion and sauté until translucent. Add to the potato soup along with half a cup of sour cream and mix well. Season with salt, marjoram, and nutmeg. Slice the Mettenden sausages and add to the soup, then let them simmer for another 10 minutes. Chop the chives and sprinkle them over the soup before serving.
