Spicy sausage salad with mustard and caper sauce

Ingredients for 3 servings:

  • 400 g meat sausage
  • 100 g onion rings
  • 2 tomatoes, quartered
  • 3 eggs, hard-boiled, sliced
  • 4 tbsp oil
  • 3 tbsp vinegar
  • 1 tsp capers
  • 1 tbsp mixed herbs
  • 3 tsp mustard, hot
  • 1 garlic clove(s), chopped
  • 1 pinch(s) of sugar
  • salt and pepper
  • marjoram

Instructions

Working time approx. 25 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 25 minutes

Cut the sausage into strips. Arrange in a bowl with onion rings, tomatoes, and eggs. For the dressing, combine the oil, vinegar, capers, herbs, and mustard. Add the chopped garlic clove, a little sugar, salt, pepper, and marjoram, and pour over the first few ingredients. Let it marinate in the refrigerator for at least 2-3 hours, preferably overnight. We like to serve it with hearty farmhouse bread, but it also makes a delicious dinner with white bread or potatoes. It’s especially good for guests; even children love it. I usually make double or one and a half times the amount.
