Spicy sausage salad

Ingredients for 4 servings:

  • 1 ring/s of meat sausage (500 g)
  • 4 gherkins and some cucumber juice from the jar
  • 2 onions
  • 2 tbsp mustard
  • 2 tbsp horseradish
  • 4 tbsp vinegar (apple cider vinegar)
  • 4 tbsp oil
  • ½ tsp paprika powder, hot
  • Sugar
  • 2 tbsp chives, in rolls
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Thinly slice the sausage, onions, and cucumbers. In a bowl, combine the mustard with horseradish, vinegar, oil, 3-4 tablespoons of cucumber juice, and 3 tablespoons of water. Season to taste with salt, pepper, paprika, and sugar. Mix the sausage slices with the cucumbers, onions, chives, and marinade. Let marinate for at least 1 hour.
