Spicy Schmarrn

Ingredients for 4 servings:

  • 6 eggs
  • 400 ml tomato juice
  • 3 tbsp herb mix, frozen
  • 250 g flour
  • salt and pepper
  • Clarified butter
  • 200 g bacon cubes
  • 100 g cheese, grated
  • n. B. Thyme

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

easy and fast

Whisk the eggs with tomato juice and herbs. Mix in the flour and knead into a smooth batter. Season with salt and pepper. Heat the lard in two large pans and fry half of the bacon in each. Pour half of the batter into each pan and cook over low heat for about 5 minutes until golden brown. As soon as the batter can be turned, turn it over and finish cooking on the other side. Tear the Schmarrn into pieces with a fork and sprinkle with cheese. Place the lids on the pans and let the cheese melt. Sprinkle the Schmarrn with thyme, if desired, and serve. A green salad goes very well with the dish.
