Spicy sesame bread
Pre-dough
- 250 ml Lukewarm water
- 8 g Fresh yeast
- 1 tsp Raw cane sugar
- 1 tbsp Wheat flour 550
Main dough
- 250 g Wheat flour 550
- 150 g Wheat flour 1050
- 50 g Cornmeal
- 8 g Salt
Spices
- 0,5 tsp Cinnamon powder
- 1 tbsp Curry powder
miscellaneous
- 50 g Sesame
- 2 tbsp Sesame oil
Pre-dough
- Pour lukewarm water into a mixing bowl / food processor. Add the crumbled fresh yeast, add raw cane sugar and 1 tbsp wheat flour 550, stir together. Cover the pre-dough in a warm place and let REST for a quarter of an hour.
Main dough & spices
- Add the remaining flour, salt, the spices, sesame & sesame oil to the pre-dough. Knead everything together for about 3 minutes. Now cover again in a warm place and let REST for about 1 hour. Preheat the oven to 200 ° degrees top / bottom heat.
Molding & baking
- After GOING, knead the bread dough once with clean floured hands. Lightly grease a bread pan and place the bread dough in it. Cut in & flour, put the lid on it and put it in the preheated oven. Bake for 40 minutes.
- Remove the lid 10 minutes before the end so that the bread gets a nice crust in the oven. Then take it out and let it cool down a little in the pan. Later, take it out completely and let it cool down completely on a wire rack.
