Spicy stew with minced meat, broccoli, carrots and bacon

Ingredients for 6 servings:

  • 500 g broccoli, fresh
  • 200 g carrot(s)
  • 1 bunch of spring onions
  • 1 garlic clove(s)
  • 150 g smoked bacon, diced
  • 2 tbsp olive oil, more if needed
  • 750 g minced meat
  • 1 tbsp paprika powder, sweet
  • 3 tbsp tomato paste
  • 850 ml tomato(s), whole or chopped, from the can
  • 1 tbsp instant broth
  • 2 tsp oregano, dried
  • 1 liter of water
  • salt and pepper
  • Sugar

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

Clean the broccoli and cut into small florets, also processing the stalk, peeling it, and cutting it into small pieces. Peel the carrots and dice them. Wash the spring onions and slice them into rings. Heat the olive oil in a large pot and fry the bacon until crispy. Add the minced meat and fry until crumbly. Then add the carrots, spring onions, and garlic and fry briefly. Then add the paprika and tomato paste and sauté briefly. Now add the tomatoes and their juices, along with 1 liter of water. Crush the whole tomatoes. Bring everything to a boil, stir in the stock, season with salt, pepper, oregano, and a pinch of sugar, and simmer for about 10 minutes. Add the broccoli and simmer for another 5-7 minutes. Note: I have also made this recipe before using only 400g of minced meat. You can vary the quantity depending on your preferred vegetable-to-meat ratio. Anything works as a side dish: bread, pasta, rice, or potatoes—whatever you like.
