Quick vegetable casserole for lazy people

Ingredients for 4 servings:

  • 750 g potato(s), waxy
  • 750 g vegetables (Kaisergemüse), frozen
  • 1 onion(s)
  • 1 tbsp margarine
  • some flour, for dusting
  • 500 ml vegetable stock
  • 200 ml cream
  • 1 tbsp processed cheese
  • Salt
  • pepper
  • Sugar
  • lemon juice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

vegetarian, simple, with cheese sauce

Peel the potatoes and cut into small cubes. Bring salted water to a boil. Cook the potatoes and Kaisergemüse for about 15 minutes until al dente. Preheat oven to 180°C. In the meantime, peel and finely chop the onion. Melt the margarine and sauté the onion in it until translucent. Dust with flour, let it cook briefly, and then deglaze with vegetable stock. Bring to a boil and add the cream and processed cheese. Season and simmer briefly. Then transfer the vegetables and potatoes to a baking dish, pour the sauce over them, and mix thoroughly. Place in the oven for 20 minutes. Tip: If you like, you can of course vary the vegetables and sprinkle with grated cheese for topping if desired.
