Ingredients for 4 servings:
- 1 kg sweet potatoes
- 200 g Cheddar cheese, grated
- 4 eggs
- 3 tbsp, heaped flour
- 3 tbsp, heaped turmeric
- 1 tbsp, heaped paprika powder, hot
- Olive oil for frying

Peel the sweet potatoes and coarsely grate them while they’re still raw. Mix the grated cheddar, eggs, flour, turmeric, and paprika with the sweet potatoes. This is best done with your hands in a large bowl. Heat olive oil in a pan and form the mixture into balls. Gently flatten each ball as you place it in the pan. Fry on both sides. Tip: We fry the rösti with the lid on the pan so the insides are cooked through. But be careful—the patties brown quickly on the bottom. Be careful of the heat. A herb curd, for example, goes very well with this.
