Spicy tomato couscous

Ingredients for 2 servings:

  • 300 g couscous
  • 1 tomato(s)
  • 2 small onions
  • 1 clove(s) garlic
  • 1 bunch of parsley
  • 2 tbsp olive oil
  • 300 ml vegetable broth or chicken broth
  • 4 dashes Tabasco, red
  • Tomato paste (1 – 2 tbsp)
  • salt and pepper
  • possibly cayenne pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Modified Tabbouleh

Wash or peel the onions, tomatoes, garlic, and parsley. Then chop very finely and sauté in 1 teaspoon of hot olive oil for about 1 minute. Add the tomato paste and fry briefly, seasoning well with salt and pepper. If you like it spicy, you can add a little cayenne pepper and Tabasco. Deglaze with the vegetable or chicken stock and bring to a boil. Once boiling, remove the pan from the heat and stir in the couscous. Cover the pan and let it swell for about 10 minutes. Then add another 1 teaspoon of olive oil and season with salt, pepper, and Tabasco to taste. Delicious as a side dish to meat or simply as a main course. Also delicious cold.
