Spicy tomato sauce with bacon and mozzarella

Ingredients for 8 servings:

  • 250 g bacon, diced
  • 2 large onions, peeled and cut into small cubes
  • 3 cloves garlic, peel and finely chop
  • 1 tube(s) Tomato paste
  • 250 g cocktail tomatoes, wash and quarter
  • 2 can/n tomatoes, chopped
  • 300 ml broth
  • oregano
  • basil
  • marjoram
  • pepper
  • Salt
  • 2 tbsp olive oil, for frying
  • 1 tsp sugar, intensifies the tomato flavor
  • 2 balls of mozzarella, roughly diced

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat the olive oil in a pan and fry the diced bacon, then add the diced onions and finely chopped garlic, sautéing gently but not browning. Sauté everything with the tomato paste. Stir in the washed and quartered cherry tomatoes and the chopped canned tomatoes. Bring back to a boil briefly, then deglaze with 300ml stock. Reduce the heat and simmer gently (with sugar), then season to taste with the other spices. Simmer on low heat for 15 minutes, then top with the diced mozzarella just before serving! Serve with pasta!
