Töginger meat salad with homemade mayonnaise

Ingredients for 3 servings:

  • 200 g Leberkäse, cut into fine strips
  • 150 g gherkins, cut into fine strips
  • 1 egg yolk
  • 150 ml oil, good quality
  • 1 tbsp mustard, Dijon
  • 1 tbsp pickle liquid from the pickle jar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Place the egg yolks in a narrow bowl and whisk or hand mixer until light and fluffy. Now add the oil a little at a time (this is very important), whisking continuously until all the oil is used up and a thick mayonnaise forms. Transfer the mayonnaise to a larger bowl and mix with the mustard and pickle juice. Mix the meatloaf and pickles with the mayonnaise.
