Spicy vegetable pancakes

Ingredients for 4 servings:

  • 1 onion(s)
  • 300 g potatoes, waxy
  • 200 g carrot(s)
  • 1 zucchini
  • 2 eggs
  • 4 tbsp flour
  • salt and pepper
  • 2 tbsp sunflower oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel and coarsely grate the onions, potatoes, and carrots. Trim, wash, and coarsely grate the zucchini. Mix the vegetables together, squeeze out any liquid, and drain. Stir the eggs and flour into the vegetables. Season with salt and pepper. Heat the oil in a pan and add the vegetable mixture, tablespoon at a time, to the pan. Flatten slightly and fry until golden brown on both sides.
