Spicy vegetable stew with red lentils

Ingredients for 1 servings:

  • 1 onion(s), finely chopped
  • 3 large carrots, cut into smaller pieces (approx. 1 x 1 cm)
  • 2 large sweet potatoes, cut into smaller pieces (approx. 1 x 1 cm)
  • 1 m.-sized potato(s), grated (floury variety)
  • 2 garlic, squeezed
  • ½ tsp ginger, finely grated
  • 400 g Lentils, red, dried
  • 1 liter vegetable broth
  • ¼ tsp salt
  • ½ tsp paprika powder, hot
  • ½ tsp cumin, ground
  • 1 pinch(s) coriander powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 hours; Total time approx. 5 hours 20 minutes

A recipe for a 3.5 l Crock Pot / Slowcooker

Add all ingredients, except the vegetable broth, to the ceramic pot. Then fill the pot with vegetable broth to about 3 cm below the rim and mix the ingredients slightly. Cover. Simmer for about 4-5 hours on HIGH, or about 6-7 hours on MEDIUM. Tip: If you don’t like the heat, use only 0.25 teaspoon of hot paprika or substitute sweet paprika.
