Spinach and feta cheese pasta casserole

Ingredients for 4 servings:

  • 400 g pasta
  • 180 g sheep’s cheese (Salakis light)
  • 550 g creamed spinach, frozen
  • 250 g cocktail tomatoes
  • 350 g cheese, grated

Working time approx. 15 minutes; Cooking/baking time approx. 28 minutes; Total time approx. 43 minutes

quick and easy

Cook the pasta according to the package instructions. Meanwhile, dice the feta cheese. Halve the cherry tomatoes. Place both tomatoes and the spinach cubes in a large casserole dish or two small casserole dishes. Add the cooked pasta and toss to combine. Cover the casserole with the cheese. Bake at 180°C (350°F) until the cheese is golden brown and the spinach is bubbling. Note: The feta cheese and grated cheese provide the salt, the tomatoes provide the acidity, and the creamed spinach provides the “sauce.” You don’t need to add any seasoning. If you omit an ingredient, try to find a suitable substitute.
