with gnocchi

Thaw the spinach and squeeze out any excess water. You can also thaw it under warm water in a sieve. Meanwhile, peel the onion and dice it into small cubes. Boil the water for the gnocchi with a little salt (it’s quicker using a kettle). Heat the oil in a pan and fry the onion, then add the spinach and fry it along with the rest, seasoning with nutmeg. Add the gnocchi to the boiling water and cook for about 3 minutes. Add the Gorgonzola to the pan and crush it into pieces. Stir continuously until the Gorgonzola has completely melted. Drain the gnocchi and add them to the pan. Mix everything well and fry briefly. Season with salt and pepper to taste. Tip: Sautéing garlic with the onions also tastes good! Sliced chicken or turkey and frying it with the pan also works well. Fresh baby leaf spinach makes the pan even more tender!
