Spinach Beef – roasted beef with spinach

Ingredients for 2 servings:

  • 230 g beef, cut into thin pieces
  • 230 g fresh spinach
  • 1 piece(s) ginger
  • 1 ½ tbsp dry sherry
  • 1 tbsp soy sauce
  • ½ tsp sugar
  • some sesame oil, about ½ tsp
  • ½ tsp beef broth, instant
  • ¼ tsp cornstarch
  • 2 tbsp water

Instructions

Working time approx. 10 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 5 minutes; Total time approx. 2 hours 15 minutes

Marinate the beef with the soy sauce, sherry, sugar, and sesame oil for at least 2 hours. Finely chop the ginger and briefly fry it with the spinach in a little oil, then remove it from the pan. Add a little more oil to the same pan and fry the beef. Remove the meat from the pan, mix the cornstarch and stock with the water, and heat in the pan until the mixture simmers. Then add the spinach and ginger mixture, let it cook briefly, then stir in the beef and fry everything for about 1 minute, stirring.
