Spinach Cannelloni

Ingredients for 2 servings:

  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 tsp olive oil
  • 250 g leaf spinach
  • 50 ml water
  • 100 g feta cheese
  • oregano
  • Salt
  • pepper
  • Nutmeg, grated
  • 8 cannelloni, without pre-cooking
  • 400 g tomatoes, pureed
  • 1 tsp balsamic vinegar
  • some cheese, grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Finely dice the onion and crush the garlic clove. Heat the olive oil in a pan and sauté the onions and garlic. Add the spinach, pour in the water, and sauté for about 2 minutes. Crumble the feta cheese and fold it into the spinach. Season to taste with salt, pepper, and nutmeg. Fill the cannelloni with the mixture and place in a baking dish. Mix the passata with the balsamic vinegar and oregano, and season with salt and pepper. Pour over the cannelloni and sprinkle with cheese (amount to taste—I always use a lot). Bake in a preheated oven on the middle rack at 200°C for about 30 minutes.
